Crock-Pot Chicken Taco Chili

Here is another crock-pot recipe. This is probably the second time i have ever made chili. It seems to be a very popular American dish and it is definitely growing on me. Thanks to Skinnytaste.com for the recipe.

Ingredients

  • 1 onion, chopped
  • 1 16-oz can black beans
  • 1 16-oz can kidney beans
  • 1 8-oz can tomato sauce (used a 16oz can)
  • 10 oz package frozen corn kernels (used 2 small cans of corn kernels)
  • 2 14.5-oz cans diced tomatoes w/chilies
  • 1 packet taco seasoning
  • 1 tbsp cumin
  • 1 tbsp chili powder (used a bit more as I didn’t have any chilies in my tomatoes)
  • 24 oz (3-4) boneless skinless chicken breasts
  • chili peppers, chopped (optional)
  • 1/4 cup chopped fresh cilantro

1. Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning

2. Place the chicken on top and cover

3. My curiosity led me to take a sneak peak a couple of hours later and this is what it looked like

4. 30 minutes before serving, take out the chicken and shred it

5. It will look like this when you are done. I used a fork and knife to shred it

6. Return the chicken to the crock-pot and mix well

8. Tasting time… I added shredded cheddar cheese and sour cream

Instructions
1. Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in the crock-pot
2. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours. (i cooked for 6 hours on high)
3. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Top with fresh cilantro, low fat cheese and or sour cream
